The rice pudding version sounds like it would be good and filling, but the rice flour version jpgsawyer suggests would almost certainly work. One of my favorite snacks is a microwave pudding made from milk, ground almonds, rice flour (or corn starch, depending on the mood of the day) and a bit of butter. I don't think the milk is actually necessary to make it thicken, I am certain that if I used water it would work fine, but the milk does make it nice and rich. (Note that I don't put any sugar in this pudding, because it doesn't need it.)
