vegetable & lentil soup

Soup is my favorite way of cleaning out the fridge. This one was made an on "what I have on hand" basis.
1 carrot (but these are Dutch winterpeen we're talking about, so it's equivalent of 2-3 normal carrots), quartered and sliced
florets from one small head of broccoli
1 onion, minced
2 shallots, minced
the end of a can of corn
a handful of organic brown lentils (probably less than 1/4 c.)
7-8 stalks of celery (some of them being the small ones you get on the very inside of the plant)
the rest of a head of cabbage
Mixed all this with enough liquid (left over from poaching chicken breasts and steaming broccoli and carrots a few nights ago) to cover all the veggies, along with the leftover stalk part of two heads of broccoli - these will be taken out when the soup is done, just added for extra flavor and nutrients. For seasoning, we added a dash of soy sauce, 1/2 tsp. of rubbed sage, two bay leaves, and 1/2 tsp. of celery seeds, and fresh-ground black pepper to taste.
Tastes pretty good so far. Not one of the best soups I've made, but it serves the purpose of clearing out the fridge and emptying some containers of frozen broth in the freezer.
